There’s an undeniable feeling when Spring is in the air. The sun feels a little brighter. The air, a little warmer. And most importantly, it’s time to bring long lazy brunches back into the fold.
The classic Mimosa (sparkling and orange juice) and Bellini (sparkling and peach puree) are the tried and true favourites with your Eggs Benny. But September’s all about a fresh start – and the perfect time to try some twists on the brekky classic.
Lavender & Orange
A simple syrup addition to the classic Mimosa recipe transports your regular brunch to a garden party vibe in an instant.
You’ll need:
Equal parts
Solara Prosecco
Freshly squeezed OJ
+
15ml
Lavender Syrup
Garnish tip:
Pop a sprig of lavender in for full floral effect.
Blood Orange
While Blood Orange is indeed… orange, its flavour is more tart than the usual suspects used in a Mimosa. This and the combo of its dramatic deep orangey-red colour adds that little bit of fizz Spring is calling for.
You’ll need:
Equal parts
Solara Prosecco
Freshly squeezed blood orange juice
Garnish tip:
Use a little piece of blood orange on the rim – even better dehydrated – for the full dramatic effect.
Grapefruit Mimosa
The fresh citrusy fruit with its bitter and tart notes comes to life in this twist on the everyday Mimosa. Complemented by the sweetness of a tiny splash of triple sec, it’s a fresh and fizzy fusion of flavour.
You’ll need:
Equal parts
Solara Prosecco
Freshly squeezed grapefruit juice
+
15ml of both:
Lime juice
Triple sec
Garnish tip:
Try a sprinkle of edible flowers – like these ones from Harris Farm – to team with the pretty blush pink theme.
Lemon Mint Matcha
It wouldn’t be a Solara list without an option that encourages you to live with fizz and try something different! This is a fusion of classic citrus and sparkling flavours, accompanied by Matcha, Honey, and Sake.
You’ll need:
Solara Prosecco
Lemon juice (about ¼ of a lemon)
2 tsp honey
1 tsp matcha powder
30ml Sake
Garnish tip:
Add a few mint leaves and a slice of lemon for extra zing.
